D'OU VIENT LE HALO-HALO ? La glace n’était pas disponible aux Philippines avant le milieu du 19 ème siècle, de plus certain ingrédients utilisés dans cette préparation ne seront pas importés avant la seconde guerre mondiale ! Renaissance de la fabrication aux Philippines Même s’il existe encore beaucoup de pauvreté et de misère, je dois dire que je suis impressionné de voir comment se développent certaines régions du pays, un certain nombre d’endroits tout du moins et ce depuis quelques mois. Infrastructures, immobilier, réseaux de distribution, télécommunications, tous ces secteurs et quelques autres sont en plein boom.  Tout le monde n’en profite pas, pas encore tout du moins, mais ils sont de plus en plus nombreux ceux qui rejoignent ce que l’on peut appeler la classe moyenne. Ce ne sont plus uniquement les OFW, ces travailleurs partis gagner leur vie à l’étranger, qui soutiennent l’économie locale. Le secteur du BPO, le Business Process Outsourcing apporte sa contribution avec plus d’un million cinq cents mille travailleurs relativement bien payés. En français le Sperm Wale se nomme le cachalot et sa chasse est interdite depuis 1982 après que la population de ces cétacés ait été décimée. Deux autres de ces animaux ont été retrouvés échoués sur des plages de la Union et de Zambales, au Nord-ouest de Luzon il a de cela quelques jours.  Mais les animaux sont morts malgré les efforts des sauveteurs pour les amener dans des eaux plus profondes. A 52-footer pregnant sperm whale was found dead floating offshore east of this city, officials said Wednesday.
